Butter Garlic Rice

A very late Friday night led to a very later Saturday morning. ‘A’ wanted to go to the closest Pizza Hut corner and hog on their ‘Classic Aglio Olio’& as it is just start of the moth, we just had to go ‘Edibles Shopping’ today, all my stockpiles have been swept clean! With the unbeatable heat increasing as the day transforms into noon, I was not really keen to out to a restaurant right after we woke up (Well, almost!).

I had some leftover Rice sitting in the Refrigerator from Friday, after checking what all Vegetables I had, I decided to make him Butter Garlic Rice.  I chopped the veggies real quick and made this and it turned out to be an instant hit! ‘A’ did not even mention Aglio Olio once he tasted this Rice ..  till dinner time that is :P

Here is what you will need to make Butter Garlic Rice:

Cooked refrigerated Rice – 2 Cups
Butter – 3 tsp
Garlic – 5 cloves, finely chopped
Carrot – 1 medium, chopped
Green Beans – 5, chopped
Green Chillies -2 – to taste – finely chopped
Baby Corn – 3 – slit lengthwise and cut from the centre (Optional)
Red Chilli Sauce - 1 tsp
Green Chilli Sauce – 1 tsp
Pepper - 1 pinch
Salt to taste

How to make Butter Garlic Rice:

Heat Butter in a Pan, add Garlic and chopped Green Chillies and let them sizzle

Add the Onions and fry till tender, add the chopped Carrots and Green Beans and raise the heat to high & stir fry for 3-4 minutes (Make sure the Vegetables are not thoroughly cooked, you will miss the ‘Chinese Crunch’ in the dish otherwise

Then goes in the Red and Green Chilli Sauce (Note: No Soy Sauce), keep stirring

Add the Baby Corns here and mix well – if you think it will need a little more Butter – go ahead!

Add ‘Refrigerated Rice’ (Best for making any Chinese Rice Dish) to this and mix thoroughly

Add Salt & Black Pepper Powder as required and stir

Scramble an Egg on a different Pan and mix with the Rice, I made a little surface on the same Pan by pushing the Rice to one side and putting a little Butter; once the Butter melted, I broke the Egg in, scramble with the Spatula and add to the Rice, mix once more and ... VOILA .. It’s done!

It is best eaten by itself, if you have any side dish to go with it, good for you! :D
